Chicken Chorizo Wraps

The combination of chicken, chorizo and bell pepper is often used in the Mediterranean (especially in the Catalan part), especially when it comes to barbecue skewers. But this composition of ingredients also fits very well on a wrap. Very tasteful because of the Spanish / Mexican herbs and fresh because of the paprika and crème fraiche.

Preparation

  • Make a spice mix by mixing the paprika powder, cumin powder, coriander, cayenne pepper and oregano
  • Cut the chicken into strips or small cubes now
  • Slice the chorizo into half moons
  • Cut the red and green bell pepper into cubes or small strips

In the pan or in the wok

  • Put some oil in a pan and add the chicken pieces
  • Sprinkle the spice mix over it and mix well with the chicken
  • Fry the chicken first and then add the chorizo pieces
  • When the chorizo darkens in colour, add the green and red pepper pieces
  • Stir regularly so that it does not burn and everything is well cooked
  • Grab a wrap (tortilla) and put some of the chicken/chorizo mixture on it
  • Put some crème fraiche on it or place it next to it on the plate and roll up the wraps

For the spiciness of these delicious Spanish / Mexican rolls you can choose from a soft chorizo that is not spicy or a medium spicy version or an extra spicy version. If the spicy version is not spicy enough, increase the amount of cayenne pepper. Or you use Spanish peppers or rawits instead of the Padron peppers. Padron peppers are a special green sweetish pepper that is only grown in Spain, but 1 in 100 is spicy which can surprise you.

  • 6 Wraps
  • 500 g Chicken
  • 20 g Padron peppers / green chili peppers
  • 100 g Spicy chorizo
  • 1 Green and 1 red bell pepper

Spice mix:

  • 2 tbsp Pimento de de la vera
  • 2 tbsp Cumin
  • 2 tbsp Coriander
  • 1 tsp Cayenne powder
  • 1tbsp Oregano
