Sambal Balado Serbaguna

Sambal Balado Serbaguna or Sambalado is a sambal that comes from West Sumatra and then from the Padang kitchen. Balado means "with chili" in the Padang dialect, which you will certainly taste (spicy!). Usually sambal is used as a marinade or served as a side dish. Sambal Balado is often used as a base and mixed with other ingredients to make e.g. Sambal Terong Balado (Eggplant Balado), Telur Balado (Eggs), Ayam Balado (Chicken), Udang Balado (Shrimp), Squid Balado (Squid), Dendeng Balado (Beef), Kentang Balado (Potato or Rice) and there are many more examples of which you can find some on this website.

Preparation

  • Cut all hard ingredients such as the peppers, garlic, tomatoes and onions into small pieces and put them in a mortar
  • Grind everything well so that all juices and flavors are released well
  • For an extra intense taste, you can fry the sambal in a pan after mortaring
  • Let it simmer for 5 minutes and stir everything regularly, then let the sambal cool down slowly (not in the refrigerator)
  • Do you use the sambal immediately without heating first, let the sambal stand for a while before using it so that all the flavors can mix well, or make the sambal a day in advance for an even better result You can keep the sambal good for quite a long time if you store it in a sealable jar and in a cool place or in the refrigerator, so make enough

  • 3 Birdseye peppers
  • 7 Shallots
  • 4 Garlic cloves
  • 3 tbsp Granulated sugar
  • 1 tsp ve-tsin or salt
  • Juice of 1 lime
