Sambal Bawang

Sambal Bawang is a versatile sweet onion sambal from the island of Java (Indonesia) and widely eaten among the Indonesians. Moreover, the ingredients are easy to find. The intense taste of raw garlic in combination with the spiciness of Rawit peppers makes it simple but very popular. For those who like a challenge, a little spicy wok oil is often added. This special onion sambal suits every dish. Since it is spicy, light and savoury, it suits the taste of most Indonesians.  This Sambal has many variants such as Sambal Bawang Cobek, Sambal Bawang Gurih, Sambal Bawang Pedas Gurih, Sambal Bawang Tomat Pedas Gurih, Sambal Bawang Teri, Sambal Bawang Ayam Geprek, Sambal Bawang Esqu. Preparation

  • Cut all hard ingredients like the peppers, garlic, tomatoes and onions small and put them in a mortar
  • Mordle everything well so that all the juices and flavours are released well, then add the sugar, salt and stock
  • For an extra intense taste, you can fry the sambal in a pan after it has been mortared.
  • Let it simmer for 5 minutes and stir everything regularly, then let the sambal cool down slowly (not in the refrigerator)
  • Use the sambal immediately without heating first, let the sambal stand for a while before using it so that all the flavours can mix well, or make the sambal a day in advance for an even better result
  • You can keep the sambal good for quite a long time if you store it in a sealable jar and in a cool place or in the refrigerator, and use it as a basis for many variants, such as us make enough

The Sambal Bawang has undergone many developments over the years. Sambal Bawang can be prepared fresh and raw, or if you prefer a more intense taste, you can also heat and fry the whole thing first. For a fresher taste, many of the Sambal Bawang recipes are also combined with lemongrass or djeruk purut leaves. You eat these sambals as a side dish and go well with fish, vegetables and meat dishes.
