Sambal Belimbing Wuluh

There are many types of chili sauce in Indonesia. They are not all spicy but also vary from sweet to sour and fresh. Fruit is often used to give a sambal a somewhat sour and/or fresh taste, such as Pineapple, Gandaria, Tomato or Star fruit. The Sambal Belimbing Wuluh is a spicy but sour sambal based on star fruit. This Sambal has many variants such as Sambal belimbing wuluh kemangi, Sambal belimbing wuluh ikan asin, Sambal belimbing wuluh terasi, Sambal belimbing wuluh rebon, Sambal belimbing wuluh segar, Sambal hijau belimbing wuluh, Sambal goreng belimbing wuluh,  Sambal belimbing wuluh mentah, Sambal belimbing wuluh udang, Sambal belimbing wuluh ala rumahan etc. Below the recipe for the base, click on the name of the sambal for the other Sambal Bawang recipes.

Preparation

  • Cut the rawits, garlic and spring onions small and fry them together with the terasi for 5 minutes or until everything is soft and then put them in a mortar
  • Add cayenne pepper, ve-tsin, sugar and lime juice and mortar everything well so that all juices and flavours are released and combined well.
  • Finally, add the discs of star fruit to the sambal and mix well and let everything soak in for at least half an hour (or rather longer).
  • Do you use the sambal immediately without heating first, let the sambal stand for a while before using it so that all the flavours can mix well, or make the sambal a day in advance for an even better result
  • You can keep the sambal good for quite a long time if you keep it in a sealable jar and in a cool place or in the refrigerator, so make enough

The sambal Belimbing Wuluh has a spicy and sour taste that you have to love. The Sambal Belimbing Wuluh has undergone many developments over the years. Sambal Belimbing Wuluh can be prepared fresh and raw, or if you like a more intense taste, you can also heat and fry the whole thing first. For a fresher taste, many of the Sambal Belimbing Wuluh are also combined with lemongrass or djeruk purut leaves. You eat these sambals as a side dish and go well with fish, vegetables and meat dishes.

   INGREDIENTS
  • 5 Rawit peppers
  • 1 tbsp Cayenne pepper
  • 5 Large spring onions
  • 2 Garlic cloves, pressed
  • 1 tbsp Terasi bakar (grilled)
  • Salt or ve-tsin to taste
  • Sugar to taste
  • Juice of 1 Lime
  • 5 Star fruit, sliced
