Sambal Bawang Tomat Pedas Gurih

Sambal Bawang Tomat Pedas Gurih is a versatile spicy onion sambal from the island of Java (Indonesia) and widely eaten among the Indonesians. Moreover, the ingredients are easy to find. The intense taste of raw garlic in combination with tomato and the spiciness of the rawits makes it very popular. For those who like a challenge, a little spicy wok oil is often added. This special onion sambal suits every dish. Because it is spicy, light and savoury, it suits the taste of most Indonesians.

Preparation

  • Chop the peppers, tomato, garlic and onions small and fry them fruity or until everything is soft and then put them in a mortar
  • Add sugar, salt and stock powder and mortar everything well so that all juices and flavours are released and combined well
  • Put everything back in the pan with some spicy wok oil and stir-fry the sambal for 5 minutes on a low heat, keep stirring
  • If you use the sambal immediately without heating it first, let the sambal stand for a while before you use it so that all the flavours can mix well, or make the sambal a day in advance for an even better result
  • You can keep the sambal good for quite a long time if you store it in a sealable jar and a cool place or in the fridge, so make enough

The Sambal Bawang Tomat Pedas Gurih can be prepared fresh and raw, for a more intense taste you can first stir-fry and let it simmer. For a fresher taste you can add some lime juice at the end or add lemongrass or djeruk purut leaves during stir-frying.
