Bánh mì

Banh mì

Vietnamese Bánh mì are stuffed wheat rolls or baguettes. The word Bánh mì literally means bread wheat. You can fill the sandwiches with delicious and colorful ingredients that go well with a nice summer temperature. The Bánh mì is quick and easy to make and always a success. This recipe consists of two parts, One is for the Bánh mì itself and the other is for the spicy dipping sauce that you eat with it.

Preparation

  • Preheat the oven to 240°C / hot air 220°C.
  • Cut the beef into strips and marinate with the fish sauce and black pepper.
  • Roast the meat in the oven for 15 minutes, then lower the oven to 190°C / hot air 170°C
  • Leave the meat in the oven for another 25 minutes (for 'medium rare', or longer if you want 'well done').
  • Then take them out of the oven and let them cool for at least 2 hours.
  • Mix the sambal with the mayonnaise to a spicy mayonnaise and set aside. (You can also use this Algerian sauce)
  • Cut the baguette lengthwise and remove the ends.
  • Scoop out the inner soft bread, leaving a bowl about 2 cm thick.
  • Spread the spicy mayonnaise over the top and bottom of the bread.
  • Take the cooled thin slices of beef and place a layer on the bottom of the baguette (on top of the sauce).
  • Then put the carrot, bell pepper, cucumbers, herbs and the red onion on top.
  • Then put the top of the baguette on top
  • The bun will bounce from the many ingredients, so press the top on firmly and wrap very tightly in cling film.
  • Then place the filled buns in the fridge for at least an hour.

The dipping sauce:

  • Mix the dipping sauce ingredients with 2 tbsp water.
  • Stir until the sugar has dissolved and taste it, ad more fish sauce or lime if needed.
  • Take the buns out of the fridge again and cut them into four portions
  • Serve with a separate bowl of dipping sauce per person and any leftover spicy mayonnaise.
