Grilled chicken with Greek rice salad

A delicious summer Greek rice dish. Perfect for the summer, but can also be eaten in the other months. The combination of rice with chicken and vegetables makes this salad a complete meal that can be eaten hot or cold.

Preparation

  • Cook the rice according to package directions, rinse and steam with the lid on the pan.
  • Meanwhile, mix the butter, chili pepper and garlic into a herb butter.
  • Cut the chicken into strips and marinate with a good dash of olive oil and Greek herbs
  • Put the chicken breasts in a hot grill pan with some oil or butter and fry the chicken for 5 minutes on each side
  • Remove the chicken from the pan and place in a bowl and mix with half of the spicy herb butter, set aside so that the herb butter melts well over the chicken.
  • Wash the tomatoes and cut them into pieces, pit the black olives, chop the onion and crumble the Feta and put everything together in a deep bowl
  • Take the rice and stir in the remaining olive oil, lemon juice and grater
  • Now mix the tomatoes, olives, onion and half of the feta through the rice.

Enjoy your dinner

  • Serve the salad on a plate and first place the rice mixture with the chicken on top and let the rest of the herb butter melt over it. Finish with the rest of feta and possibly some fresh chopped coriander or parsley. Delicious with a baguette with herb butter.

  • 225 g Rice
  • 25 g Butter
  • 1 Chili pepper
  • 1 Garlic clove
  • 400 g Chicken
  • 1 1/2 tbsp Olive oil
  • 300 g Cherry tomatoes
  • Handful of black olives
  • 100 g Feta cheese
  • 4 Mint leaves
  • 1/2 Lemon juice and zest
