Japanese Spice Burger

This delicious Japanese Spice Burger with homemade wasabi mayonnaise will surprise you. The homemade wasabi mayonnaise is nicely balanced with the cucumber salad, which gives a unique Japanese flavor to this delicious BBQ burger.


  • Lightly oil the grate and preheat the grill or BBQ
  • Cut the white and light green part of the spring onions and put them in a bowl with the rice wine vinegar
  • Let it rest for at least 30 minutes
  • Cut the cucumber diagonally into 1 cm julienne strips with a mandoline slicer
  • Mix the mayonnaise, yogurt, wasabi, garlic and Shichimi Togarashi spice mix in a bowl
  • Set aside about 80 ml of the wasabi mayonnaise for later use
  • Add the remaining wasabi mayonnaise to the cucumber mixture and mix well
  • Cover both the cucumber salad and the remaining wasabi mayonnaise and keep them cold

On the grill or BBQ

  • Mix the ground beef and form 6 burgers
  • If necessary, use an egg and breadcrumbs to strengthen the burgers Sprinkle both sides of each burger with sea salt and freshly ground black pepper
  • Place the burgers on the hot grill or BBQ
  • Grill until they can be turned without sticking to the grill, then flip
  • Cook the burgers for at least 6 minutes on each side until cooked through
  • At the end of the grilling time, place the buns, cut-side down, on the grill to toast lightly, about 2 minutes
  • Cut the cherry tomatoes into four slices and sprinkle lightly with salt
  • Spread the bottom of each bun with the reserved wasabi mayonnaise and top with burgers
  • Divide the cucumber salad and tomatoes over the burgers and cover with the top of the bun

Serve the Japanese Spice Burger with a delicious bowl of fries or rice and loose cucumber slices. Tip: Make some extra wasabi mayonnaise for those who like it. Shichimi Togarashi Spice Blend, also called 7 Spice Blend, is available at the toko and in some supermarkets or you can just make it yourself, look at our spice blends or on the right side of this page.   • 4 Large spring onions, ring sliced
  • 80 ml Rice wine vinegar
  • 1.5 Cucumber
  • 125 ml Mayonnaise
  • 125 ml Yogurt
  • 1 tbsp Wasabi paste
  • 2 Cloves of garlic
  • 1 tbsp Shichimi Togarashi spice mix
  • 500 g Minced beef
  • 500 g Minced pork
  • Sea salt (to taste)
  • Black pepper (to taste)
  • 12 Cherry Tomatoes
  • 6 Hamburger buns or half ciabattas
