No-bake fruit cakes

A nice fresh cake usually goes in. This No bake fruit cake is a delicious quark-like cake that actually fits any fruit. It is also very easy to make and you don't need an oven. We make the cottage cheese here ourselves by combining cream, concentrated milk with fresh lime juice. The reaction of the lime juice produces a nice thick quark.


  • First, crumble the cookies and put them in a bowl
  • Melt the butter and then add it to the biscuit crumbs and stir well
  • Put the mixture in a cake shape and make sure that the cookie butter mixture is evenly distributed over the bottom
  • Let it cool in the refrigerator
  • Grab a clean mixing bowl or clean the previous one
  • Add the cream, sweetened and unsweetened concentrated milk to the bowl and stir well Now pour in the squeezed juice of the limes and mix/stir until it becomes firm (like quark)
  • Set it aside, preferably in the refrigerator
  • Fill a bowl with cold water and soak the gelatin in it until it is smooth
  • Heat the jam in a saucepan but do not let it boil
  • Remove the gelatin from the cold water, squeeze the water out a little and add it to the jam
  • Stir the gelatin well into the jam until completely dissolved
  • Remove the jam from the heat and let it cool slightly, then add the jam to the cream
  • Mix this well so that the jam is evenly distributed through the cream
  • Remove the cake tin with cake layer from the refrigerator and fill the cake tin with the cream jam mix
  • Make sure everything is evenly distributed and let the cake cool in the fridge for at least 6 hours or preferably overnight
  • When the cake has set well, you can decorate it with a topping, we used whipped cream here and placed it with the spoon and then sprinkled with white and dark chocolate shavings

A cake for every occasion. You can serve this No bake fruit cake as a dessert after a feast or as a delicious fresh cake at a festive event. In this example I used a fresh apricot jam but you can actually use any kind of fruit jam you like. You can also use the homemade cottage cheese separately as a dessert, if you want it a little firmer, add some extra lime juice. As a topping you can use chocolate and whipped cream or just pieces of the fruit you use as a filling. See below how to make this cheesecake.

  • 400 ml sweetened condensed milk
  • 125 g Melted butter
  • 400 ml Unsweetened condensed milk
  • 1 Jar of fruit jam of your choice
  • 800 ml Cream
  • 3 squeezed limes
  • 9 Gelatin sheets
  • Half block of white and black chocolate
  • Enough cookies (type of cookies of your choice)
