Sambal Bawang Ayam Geprek

Sambal Bawang Ayam Geprek is a variant of the Sambal Bawang that is perfect for fried crispy chicken or chicken nuggets. Sambal Bawang is a versatile sweet onion sambal from the island of Java (Indonesia) and widely eaten among the Indonesians. Moreover, the ingredients are easy to find. The intense taste of raw garlic in combination with the spiciness of rawit peppers makes it a very popular garlic dipping sauce for fried chicken. For those who like a challenge, a little spicy cooking oil is often added. This sambal suits because it is spicy, light and savory, it suits the taste of most Indonesians.


  • Cut all hard ingredients such as the peppers, garlic and onions small and put them in a mortar
  • Mordle everything well so that all juices and flavors are well released and add the vetsin, sugar, lime juice and chicken stock powder
  • Mix it well again and heat the 4 tablespoons of wok oil in a pan with a thick bottom
  • Pour the hot wok oil with the sambal, stir it well together
  • Let the sambal cool down and possibly put it in a sealable jar, set aside

In the pan or in the Wok

  • Cut the chicken into pieces of about 3 to 5 cm
  • Take two plates and put the breadcrumbs in one plate and in the other you beat the eggs
  • Now get the chicken pieces one by one first through the breadcrumbs and then through the egg mixture and then through the breadcrumbs again so that there is a nice croka nt layer around each piece of chicken
  • Heat the frying oil in a Wok or deep fryer
  • Fry the chicken pieces until golden brown and serve them warm with the sambal as a dipping sauce

The Sambal Bawang Ayam Geprek fits perfectly in a rice table and as a side dish with a vegetable dish. You can also put the chicken pieces on a leaf of lettuce with the sambal on top and then place it between a hamburger bun. With some cucumber and tomato slices for freshness, you quickly have a delicious intense Indonesian hamburger for lunch.

  • 15 Rawit peppers
  • 3 to 4 tbsp wok oil
  • 3 cloves of garlic
